Chicken Parmesan is a classic Italian favorite, and Grandpa Pete’s take on this dish is sure to impress. With crispy breaded chicken, rich gourmet tomato sauce, and melted cheese, it’s a comforting and flavorful meal perfect for any occasion. Ingredients
- 2 Chicken Breasts
- 1.5 Cups Italian Seasoned breadcrumbs
- 2 Eggs
- 1 Jar of Marinara Sauce (Vodka Sauce works too)
- Mozzarella Cheese
- Parmesan Cheese
- Salt
- Pepper
- Garlic Powder
- Onion Powder
- Parsley (for garnish)
Instructions
Chicken
- Slice and butterfly chicken along the side of the breast into two nearly even cutlets.
- Pound chicken to a thinness of your liking.(The thicker it is, the longer it takes to cook)
- In a bowl/container, beat the two eggs together.
- In a separate bowl/container, add about 1-1.5 cups of the breadcrumbs, and 1-2 teaspoons of the seasonings mentioned above and mix well.
- Dip and cover chicken in eggs mix, then shake off excess egg and add to bread crumb mix.
- Cover all sides of the chicken in the breadcrumbs and shake off excess and put to the side until ready to fry.
- In a cast iron/stainless steel pan, add about 1/2 inch of cooking oil and heat on medium temperature until ready to fry.
- Fry the cutlets until golden brown on all sides and let rest on a paper towel. Also optional to add a sprinkle of coarse sea salt here for more flavor.
- On a baking sheet or casserole dish, add a thin layer sauce(helps reduce sticking), add the cooked chicken, add sauce on top of chicken, grate some parmesan on the sauce, add slices of mozzarella on top.
- Broil the chicken until the mozzarella is nice melted. Optional to continue broiling until there are some dark spots on the mozzarella.
Garnish (optional)
- Grate a little more parmesan onto chicken.
- Add parsley for garnish.
