A simple and quick dish to make for breakfast! Poached eggs marinara is an easy way to enjoy Grandpa Pete’s Marinara Sauce in the morning! An Italian spin for a delicious breakfast option.
Ingredients:
1/2 cup Grandpa Pete’s Sunday Marinara Sauce
1/2 lb. Italian sausage, casing removed (optional)
Red pepper flakes
2 eggs
Parmesan cheese
Parsley, fresh
Italian bread, or English muffin
Instructions:
Brown sausage in an 8-10 inch skillet over medium heat; cook fully through. (optional)
Add marinara into the skillet and continue to cook over medium heat.
Make two divots in the sauce using a spoon and crack one egg into each.
Sprinkle a pinch of red pepper flakes.
Cover the skillet with a lid until the white of the eggs are fully set and the yolk is cooked to your desire (5-8 mins).
Sprinkle with parmesan cheese and garnish with parsley.
Serve with bread for dipping.
